We used our hand Traeger electric smoker to take all the guess work out of making these easy smoked vegetables. The best part about the Traeger is that you can set it an forget it. Let the zucchini, peppers, onion and squash smoke at 180F for an hour to infuse them with the most smoke flavor possible.

WHAT VEGETABLES CAN I SMOKE?

The simple answer to which vegetables are well-smoked is just about all of them! You can select a variety of vegetables, but just be sure to cut them into sizes that will cook at about the same rate as the other vegetables.

Heartier vegetables like carrots, onions, or peppers will take longer to cook than more delicate vegetables like asparagus or zucchini. Here are the vegetables we selected for this easy smoked vegetable recipe.

Use whatever you have on hand. Broccoli, sweet potatoes, and cauliflower would be great options as well. Take away what you don’t like and add more of whatever your family’s favorite is. Make this recipe work for you!

HOW TO SMOKE VEGETABLES

After you have selected your vegetables, it is time to preheat the Traeger Smoker to 180F. It will need about 15 minutes to get up to temperature, depending on how cold it is outside.

I have found that in really cold Minnesota winters, my smoker takes longer to get to the temperature and has a harder time keeping temperatures high. Therefore I often have to add a little time to recipes on cold days.

Slice the carrots into ¼” thin strips that are 2-3 inches long. Cut the onion, bell peppers, zucchini, and squash into slightly wider sections to prevent burning or overcooking. Break the tough ends off the asparagus stems and leave them whole.

Combine olive oil, garlic, paprika, salt, pepper, and onion powder in a small bowl. Toss the vegetables thoroughly with this mixture.

Arrange the vegetables in a grill basket or on a baking sheet. Place into the smoker and smoke for 1 hour at 180F.

Check to be sure veggies are tender before removing them by using a fork. If it easily slices through, the veggies are ready.

Cooking times may vary so be sure to check on them periodically! If the vegetables aren’t done in time for dinner, crank the temperature up to 375F and cook for 5-10 minutes until they are tender.

Ingredients
  

  • 2 Zucchini
  • 1  yellow Squash
  • 1 white Onion
  • 3  Bell pepper
  • 1 bunch asparagus
  • 3 carrots

MARINADE

  • ¼ Tablespoon cup extra virgin olive oil
  • 1 Tablespoon   minced garlic
  • 1 Tablespoon smoked paprika
  • 2 Tablespoon salt
  • 2 Tablespoon  pepper
  • 2 Tablespoon  onion powder

Instructions
 

  • Preheat the electricsmoker to 180F.
