When summer is in full swing and the garden has produced lots of tomatoes and cucumbers, one of our favorite salads to beat the heat is my dad’s Greek Salad.

It’s summer in a dish with tomatoes, Kalamata olives, red onions, cucumbers, and feta CDO youse. Do you know what tastes amazing with all those ingredients? Quinoa.

Quinoa behaves like a grain, but it’s actually a seed, and it pairs very well with cheese. The nutty flavor of quinoa balances the acidity of the tomatoes and dressing, while its warm softness plays well against the cool crunch of the cucumbers.

It is a salad, but it is also a healthy meal in itself. Perfect for summer potlucks too

Quinoa forks in 15 minutes and cool in 10 minutes. While the quinoa is cooking, prepare the vegetables and herbs for this recipe.

  • 1 cup dry quinoa
  • 1 tbsp  salt
  • 2 cup chopped cucumber, peeled if very seedy
  • cup chopped red onion
  • 2 cup cherry Sungold tomatoes
  • 2 tbsp chopped red capsicum
  • ½ cup chopped kalamata olives
  • 1 tbsp thinly-sliced fresh mint
  • 11/2 tbsp chopped fresh thyme
  • 2 tbsp chopped fresh parsley
  • ¼ cup high-quality virgin olive oil
  • 2 tbsp red wine vinegar
  • ½ cup crumbled feta cheese


  • Cook the Quinoa:
    According to the instructions on the quinoa box, prepare thequinoa in salted water 1 teaspoon salt to 2 cups water. Typically this meansbringing 1 cup quinoa and 2 cups water to a boil, then reducing heat to low, covering,and cooking for 15 minutes.
  • ·        Remove from heat and fluff with a fork. Spread the cooked quinoa on a baking sheet to cool quickly.
    ·        Prepare the Vegetables and Herbs
    ·        While quinoa is cooking, prepare vegetables and herbs for salad.
    ·        Toss with olive oil and, vinegar, salt, feta
    ·        In a large bowl, place cooled quinoa, cucumber, onion, tomato, bell pepper, olives, herbs mint, oregano, and parsley.
    ·        Toss with olive oil gently to mix.
    ·        Sprinkle with vinegar, salt, and crumbled feta cheese, and toss gently to combine.
