  • The key to making the perfect Pomegranate Paloma is to make a simple syrup. Simple syrup is made with equal parts sugar and water, combined and boiled until the sugar is completely dissolved. To add a bit of complexity to this classic cocktail, we recommend adding pomegranate juice to the simple syrup. This adds an extra level of flavor to the drink and can take it from ordinary to extraordinary.
  • To make the pomegranate simple syrup, combine 1 cup of water with 1 cup of sugar in a saucepan over medium-high heat. Stir constantly until the sugar has dissolved and the mixture has thickened slightly. Then, add 3⁄4 cup of freshly squeezed pomegranate juice and bring to a boil for 1 minute. Reduce the heat and let simmer for about 10 minutes until the syrup has reduced and thickened. Strain the syrup through a sieve and allow it to cool before using.

If you want to make an alcohol-free version of this drink, replace the tequila with orange juice, and omit the salt rim.

 

Pomegranate Paloma Recipe

Yield: Makes one cocktail

Prepare simple syrup by boiling equal parts white granulated sugar and water. If you’re making just one of these drinks and haven’t made a simple syrup, just dissolve a teaspoon of sugar in pomegranate and lemon juice. Making a delicious pomegranate Paloma is easy and requires only a few ingredients. To make the perfect Pomegranate Paloma you will need the following:

1/4 cup pomegranate juice
2 tbsp lime juice
2 teaspoons simple syrup
3 tbsp (1 1/2 oz) white tequila I’m using Piedra Azul Blanco, 100% agave
1/4 cup club soda
kosher salt for glass rim
rosemary sprigs for garnish

Salt 1 glass: Brush the rim of an 8-ounce glass with lemon juice, then dip the rim in kosher salt. Add ice to the glass.

2 MIX DRINKS: Whisk together pomegranate juice, lime juice, simple syrup, and tequila.

Pour into 3 glasses: Pour the mixture into a salt-rimmed glass. Top with club soda. garnish with rosemary sprigs
