1pound boneless skinless chicken breast cut into one-inchcubes
2mediumgreen onions, thinly sliced
1tablespoonminced fresh ginger
2cloves garlic crushed
¼tablespoon xanthan gum
1tablespoonrice wine vinegar
1tablespoonroasted sesame oil
Instruction· In a small mixing bowl, whisk together the water, gluten-free soy sauce, puree, red pepper flakes, and 2 teaspoons of sesame seeds. (Reserve the remaining 1 teaspoon of sesame seeds.)· Heat a large skillet over medium-high heat. Add 1 tablespoon of avocado oil. When the oil becomes hot, put chicken cubes in and spread it so that they do not touch. Brown all sides of chicken cubes, reducing heat to medium-low to cook through. Transfer the chicken to a bowl and keep aside.· Place the same pan on medium heat. Add remaining tables of poon oil. Add the white part t of the spring onion and ginger root. Cook for a few minutes or till the aroma comes out. Stir in garlic and xanthan gum. Cook for about 30 seconds while stirring continuously.· Pour the rice vinegar into the wok. Stir, scraping up brown bits. Cook until almost evaporated, then stir into soy sauce mixture. Boil the mixture stirring continuously till it thickens. Stir in chicken and any accumulated juices.· Mix sesame oil and the green part of the spring onion.Sprinter kle remaining 1 tsp sesame seeds on top.
