16 thinly sliced slices of Genoa salami (1/3 pound) |

1 cup papaya or roasted red pepper, drained |
1 tablespoon drained capers |
1 large egg, lightly beaten |
2 tablespoons grated Parmesan, for sprinkling |
method
1 Heat the oven to 400°F. Place the oven rack in the lower third of the oven.
2 Roll out the dough: Spread a 16-inch sheet of parchment paper on a counter and sprinkle with flour. Roll out dough on floured parchment paper to a 14-by-11-inch rectangle.
3 Pour filling A cheese stromboli is a pizza-like dish made with dough, tomato sauce, and your choice of ingredients. Mozzarella cheese, ricotta cheese, and various other slices of cheese can be used as the filling.
4 Roll out the dough: Brush the edges of the dough with the egg. Using the parchment to guide you, pick up one long end and begin rolling. Continue rolling until the seam on the log is at the bottom. Pinch the ends so they don’t open and tuck the dough under the roll.
